(4 portions)

- 2 green


- Mozzarella cheese

- 4 eggs

-- 6 oranges

- Ginger

- Organic coffee

- Salt to taste

- Use a simple extractor and extract the juice from the oranges

- Grate 30g of ginger 

- Mix the ginger with the orange juice

Bolon Preparation


- Peel the greens and cook until soft.

-Remove the water and crush the cooked green (season to taste with butter, salt and  little herb,_cc781905-5cde-3194-bb3b-136bad5_cf)

-Grate cheese and mix with the crushed green. (Chicharrón can be added) 

-Make balls the size of the palm of your hand. 

-Fry the bolones de verde with a little oil. (Bolones can be eaten without frying)

Scrambled eggs with oyster mushrooms and mozzarella cheese


(4 portions)

- 250 g oyster mushrooms

- 6 eggs

- 25g of ghee

- 1 tablespoon of olive oil

- Salt

- Pepper



- Sauté the mushrooms el in oil, about 15 minutes over medium heat, until lightly golden. Salt and pepper (you can place a little garlic salt).

- Beat the eggs, season them with salt. Put the ghee in a pan, add the beaten eggs and cook over medium heat, stirring constantly with the whisk, for about 5 minutes, until they start to curdle.

Mix the eggs with the mushrooms and heat everything together for a few seconds.

Yuca tortillas stuffed with cheese and coffee


(4 portions)

- 1 cassava


- Mozzarella cheese

- Salt to taste 

Accompany with:

- Organic coffee



-Peel, wash and split the cassava, then place it to cook in a pot with salt for about 30 to 40 minutes, taking care that it does not come loose but that it is soft to make a puree.

- We transfer the cassava from the pot to a large bowl to be able to mash it until making a puree, add the grated cheese, ghee and we mix everything evenly.

- In a pan we put enough oil to heat, with the mace that we form we will make small arepitas or tortillas that we will fry until they take on a golden or toasted tone.

- Peel the ripe ones and cook them until they are soft.

Meat shredded in juice with red, green and yellow peppers


(4 portions)

  • 600 gr of shredded meat

  • 1 red bell pepper

  • 1 green pepper

  • 1 yellow bell pepper

  • 1 onion

  • 2 garlic cloves

  • crushed natural tomato

  • 1 glass of dry white wine

  • 1 teaspoon of sweet pepper*

  • A few sprigs of fresh thyme (or 1 teaspoon of the dry)

  • 1 bay leaf

  • 1 teaspoon ground cumin

  • Oil

  • Water

  • Salt

Trout with lemon and Ghee sauce


(4 portions)

- 4 trout

- 7 tablespoons of lemon juice

- 1 tablespoon of ghee

- Ground pepper

- Salt

- dill



- Season the trout with salt to taste and reserve while we continue with the rest of the recipe. We are going to give it a light macerate.

- Add a little lemon juice. This complement, in addition to giving it its citrus flavor that combines perfectly with all kinds of fish and white meat, will help us to cook the fish more quickly.

- We spread the trout with a good quantity of Ghee. We will place these ingredients in an oven or microwave dish that we can cover.

- We introduce at maximum power about 3 minutes, we will not need much more depending on the size of the trout to have an impressive fish dish.

- After this time we will turn the trout and let them finish cooking with the residual heat from the source. Remove from the oven/microwave and prepare this recipe to be served.

- With the juice from the fountain we will make a light sauce, put half a spoonful of cornstarch and stir until it thickens a bit.

- We serve the trout with the sauce that we will have created
